|I hope everyone is staying healthy and safe during this unprecedented time, and you will continue to be so as we start or continue with phase 1 opening from COVID-19. Even with business and gyms starting to re-open, I know many feel unsafe just going back to life as normal. At the same time, I know most people are eating too much, drinking too much, and not getting enough exercise during this time.

|Stay Healthy This Summer By Eating the Colors of the Rainbow
When it comes to healthy eating, so much advice seems to center on what not to put in our mouths that it’s easy to forget that there’s a whole world of foods out there that are great for you!
One group of such foods are those rich in phytonutrients (“phyto” meaning “plant”), naturally-occurring pigments that lend color to fruits and vegetables. There are more than 25,000 phyonutrients found in plants, and many have astounding health benefits.
Different colors offers different benefits, which is why it’s so important to eat the spectrum! (Though, admittedly, there is some crossover of phytonutrients.) Here’s a quick rundown of those you can enjoy this summer and one of the benefits each color offers. In a future article, we’ll go more into depth about the benefit of each of these nutrients.
Red: Lycopene, ellagic acid, hesperidin, and anthocyanin.
Potential benefits include: Lowered cholesterol, reduced risk of heart disease, improved circulation, reduced inflammation, improved endurance and athletic performance, and better digestion.
In season: Apples, cherries, chili peppers, pink grapefruit, radishes, red apples, red bell peppers, red cabbage, strawberries, tomatoes, and watermelon.
Orange/Yellow: Beta-carotene, alpha-carotenoids, hesperetin, beta-cryptoxanthin, and lutein.
Potential benefits include: Boosted immune system, healthy eyes, reduced risk of macular degeneration, stronger bones, reduced inflammation response.
In season: Apricots, cantaloupes, carrots, corn, mangoes, melon, nectarines, peaches, and summer squash.
Blue/Purple: Anthocyanins, betanin, vulgaxanthin, flavonoids, lutein, and resveratrol.
Potential benefits include: Improved memory, healthier aging, boosted immune system, and antioxidant protection.
In season: Blackberries, blueberries, eggplant, figs, grapes, huckleberries, marionberries, and plums.
Green: Chlorophyll, lutein, zeaxanthin, indoles, isothiocyanate, flavonoids, and sulforaphane.
Potential benefits include: Eye health, cancer prevention, reduced inflammation, and better digestion.
In season: Chard, cilantro, cucumbers, green beans, green onions, lemongrass, limes, okra, peas, spinach, and zucchini.
Make it a goal to sample from each color daily and get as innovative with your recipes as your imagination will allow! You could also try this yummy rainbow salad!

Tropical Watermelon Splash Smoothie
Bring on summer with this tropical, fruity drink! And because it’s Shakeology, you’ll be getting a serving of nutrient-dense superfoods, too!
For even brighter flavor, finish it off with a sprinkling of orange zest. Freshly cut watermelon is perfect for smoothies, but you can also like to freeze leftovers and use the frozen chunks in place of ice cubes in my smoothies.
How to Freeze Watermelon
Watermelons are made almost entirely of water, so they’re excellent candidates for freezing.
Remove the rind and scoop out the flesh with a melon baller, or cut your watermelon into cubes. If your watermelon has seeds, remove them before freezing.
Arrange watermelon pieces in a single layer on a baking sheet lined with parchment or wax paper (so they don’t stick) and then place in the freezer.
Once the watermelon is frozen, pack it into freezer bags or containers and store in the freezer until needed.
Frozen watermelon pieces can be added to smoothies, pureed for a quick sorbet, or eaten for a refreshing snack when slightly thawed.

- 1 cup water
- 1 scoop Tropical Strawberry Shakeology
- ½ cup cubed watermelon
- 1 cup ice*
Place water, Shakeology, watermelon, and ice in blender; cover. Blend until smooth. *If using frozen watermelon chunks, omit or adjust amount of ice to suit your taste.

You’ll be surprised at how easy and tasty homemade hummus can be. With just a few simple ingredients, you’ll have a savory, zesty dip for veggies, a spread for sandwiches, or a topping for salads. This is an essential FFC (fiber-filled carb) you’ll want to have on hand at all times.
• 1 (15 oz.) can of chickpeas (garbanzo beans) drained, reserve liquid⠀
• ¼ cup tahini paste⠀
• ¼ cup fresh lemon juice⠀
• 2 cloves garlic, coarsely chopped⠀
• ¼ tsp. sea salt (or Himalayan salt) (to taste; optional)⠀
1. Place chickpeas, tahini, lemon juice, garlic, and salt (if desired) in food processor or blender. Pulse until very smooth.⠀
2. If hummus is too thick, add 2 Tbsp. of the reserved chickpea liquid and pulse again. Repeat until desired consistency is reached. Source: @2BMindset on Instagram
